How is your Spring progressing? Here’s a snippet of my past month or so: Ummm, there has been a bevy of food indulgence taking place lately, what with Easter, Mothers Day, Cinco de Mayo festivities, a First Holy Communion celebration, et al. And, oh boy, how fun it’s been! Alas, however, it’s time to put the brakes on and focus on much healthier eating. After all, summer is almost here, and my beach attire is winning a serious argument with me right now!
So then, here’s a healthy, tasty, and incredibly easy acai bowl recipe which I adapted from one I discovered while perusing the amazing recipes at Hearts In My Oven. This Acai breakfast bowl keeps my tummy satiated and happy well into the noontime hour …
Acai Bowl With Peanut Butter & Dark Chocolate Granola
- A 3.5 ounce frozen Sambazon Acai Berry Superfruit Pack
- 3/4 cup frozen mixed berries
- 1 banana, sliced
- A 5.3 ounce container of low fat Greek yogurt
- 1/4 cup peanut butter
- A drizzle of Agave syrup
- 1 cup Dark Chocolate Granola
- 1/4 teaspoon cinnamon
- Shredded coconut
- Sliced strawberries or other berries
- Sliced almonds
Combine frozen acai and berries, half of the banana slices, yogurt, peanut butter, Agave syrup, and cinnamon in a blender. Mix on high speed until completely blended and smooth, about 3-4 minutes.
Divide half of the Acai mixture between two bowls. Layer 1/4 cup of the granola over each Acai bowl. Divide the remaining Acai mixture between the two bowls and layer the remaining granola on top.
Garnish with banana slices, berries and sliced almonds.
