The 9-Minute Gourmet Grilled Cheese

I love me an epic grilled cheese sandwich for lunch. And I’d do about anything (other than missing a meal) to avoid a big sloppy mess in the kitchen, especially when I’m chasing the clock … which is pretty much every day. Therefore, a fast, one-skillet, two-utensil deliciously gourmet grilled cheese sandwich is often a welcome lunch. Thankfully I am a cheese addict, and typically have several varieties on hand at any given time. So at 12:30pm today, I buttered two slices of Dave’s Killer bread, tossed one of them butter side down in a skillet over medium flame, and began building my lunch.

12:31: I added a few slices of aged white cheddar cheese to the toasting bread.

12:32: I sprinkled a handful of crumbled Stilton over the cheddar and added a trio of thin slices from a crisp Granny Smith apple.

12:34: I crowned the concoction with some grated white cheddar and Stilton crumbles, then place the remaining slice of Dave’s Killer bread atop the cheesy masterpiece (butter-side up, thank you).

12:35: I carefully flipped the sandwich and waited.

12:37: I moved the beauty to a plate and sliced it.

12:39: the sandwich had completely vanished.

Summary: Layers of sweet, tart Granny Smith apples, earthy aged cheddar cheese melted with sharp yet creamy stilton, all sandwiched between toasty slices of Dave’s Killer Bread (which happens to be loaded with all kinds of yummy seeds.) C’mon, the sandwich was friggin’ delicious! And that, my friends, is how you make a quick — uncomplicated — mess-free — “9-Minute Gourmet Grilled Cheese.”
